Cooking Egusi Soup via Boiling Method

Some individuals don’t prefer eating egusi soup that is prepared via the frying method. They prefer to eat egusi soup that is cooked via the boiling method. You, yes, you can be one of such persons.

What is Egusi Soup?

Egusi Soup remains one of the popular sumptuous delicacies in Nigerian culture. Whether at home, restaurants, weddings and other social functions, it’s longed for by all and sundry.

The soup isn’t particular to any tribe or ethnic group as it is prepared by most tribes in Nigeria, though with a significant variation. It is prepared using leafy and other vegetables and is thickened with ground melon seeds.

The cuisine can also be made more exquisite with goat, beef, fish, or shellfish. And it’s often best served with dishes such as pounded yam, etc.

Ingredients to use

  • Grounded Egusi (melon powder).
  • Rodo (Habanero).
  • Red bell pepper (Tatashe).
  • Onion.
  • Palm oil.
  • Crayfish.
  • Smoked fish.
  • Meat.
  • Locust beans.
  • Spinach or any vegetable of your choice.
  • Seasoning powder/cube.
  • Salt.

Instruction on How to Cook Egusi Soup by Boiling

Step 1

Wash your meat and add some spice to it (seasoning cube, salt and so on). Then add little water and place leave to heat until your meat is tender.

Step 2

While your meat is boiling, go ahead to blend your pepper and wash your smoked fish.

Step 3

After your meat is soft, transfer it into a clean bowl and keep it for later.

Step 4

Pour some palm oil into a clean pot, add some locust beans and fry for a minute. Add your pepper mix and leave to cook till the palm oil flows over the pepper.

Step 5

While the pepper is cooking, pour some of the stock water gotten from your meat into your melon powder to form a paste. Do not add so much water to avoid it being too watery. You can also add the remaining stock water to your pepper mix.

Step 6

Now, add your crayfish, seasoning cube, stock fish, meat and any condiment you intend to use to your pepper mix and leave to cook for 2 minutes.

Step 7

After 2 minutes, add your egusi to your soup by scooping it with a spoon, ensure you spread it around the pot and don’t stir. Cover your pot and cook on low heat.

Step 8

After 5 minutes, open your pot and stir to get a good mix of your egusi and other things in the pot. Cover again and allow to cook for 2 to 3 minutes.

Step 9

After 3 minutes, pour in your clean spinach or any other vegetable you choose to use. Cover and allow to cook for 2 minutes.
